Because an orthography is meant to have some coherence and consistency.
Breton writes final voiceless consonants in unstressed syllables, and voices them in sandhi with a following word or when an suffix is added.
Cornish doesn't. Kernowek, Kernowegor.
Or are you going to propose that we write Kernoweg, Kernowegor?
