The form *brusyas was devised by Nance and first appears in his 1938 dictionary. It is not attested in traditional Cornish. George spells this word *breusyas and in his most recent dictionary (2009) gives as source Lhuyd's brudzhiaz AB: 81a. Lhuyd, however, gives brudzhiaz s.v. Lixus 'boiled, sod'. Lhuyd's brudzhiaz therefore is the equivalent of UC and KC bryjys 'boiled'. The word has no connection at all with the root breus, brusy. George's citation is erroneous.
